Ladies and gents, the jamón Ibérico has landed at Star. As I am sure many of you are aware, the U.S. Department of Agriculture recently lifted the ban on this super Spanish ham. If you’d like to get your hands on some of this stellar puerco, Star is selling it for about $109/lb. The price of the ham factors in labor and waste, but it is worth the premium. You can also order the ham at La Tienda, but at Star you do not have to buy a whole leg which you probably will not use. Here are some shots to get your mouth watering.

    Exciting! But what do you do with it?! Do you cook it, or can you eat it as-is? I’m dumb.

    Just eat it as is. Make sure you chew it until it is completely broken down so you can really savor it.

    This is great news. I was there two months ago and the meat purveyor said that he doubted the arrival of Iberico, but had been beseiged by requests. Having lived in Spain, I can attest to the quality, and taste, of this most delicious meat.
    You do not cook this meat. It is not an addition to a recipe. You might want to serve it with a great sliced baguette, perhaps a tomato slice drizzled with olive oil, but it is phenonemal by itself. If you love proscuitto, prepare to be blown away.
    I do hope that they are carving it off the bone as they do in Spain. Other methods seem to result in a dryer portion of meat – as in my American experiences with Jamon Serrano.

    They are carving it off the bone to order. Good stuff! I bought a quarter lb. for $26. Not bad considering the amount I got.

    $109/lb. Holy hell. Nonetheless, I’m itching to buy some. Perhaps for a special occasion next month!

    Definitely get it while you can. I sense this won’t be around for very long given the response of patrons when I was there on Saturday afternoon…
